Spanish Olive And Cream Cheese Canapes

I love this recipe because it is easy and delicious, plus you can play with it and really make it your own. They disappear quickly with my crowd, so make plenty. And the basic recipe makes about 40 hors d'oeuvres. If you start adding other ingredients, you'll get more than 40, of course. Just make sure you adjust the flavors and bread accordingly. No wants to be surprised with guests coming - ha! Enjoy. Adapted from Gourmet.

Ginger Flank Steak With Sake Glazed Vegetables

A soy-sake marinade is the base for a delicious reduction sauce. For convenience, I always begin this one day ahead and refrigerate the steak in its marinade overnight for an even better flavor. This is really good served with sticky rice. Most of the prep time is for the marinating of the meat and bringing it closer to room temperature before cooking. Enjoy. Adpated from Bon Appétit.

Mandarin Coleslaw

I found this recipe on the back of a Publix Coleslaw bag. This recipe features a mix of cabbage (green and red) and carrots and a lovely dressing. Of course, I had to mess with it and add a few ingredients, as is my nature - ha! I will include the original recipe with my adds below. **NOTE: I like to let this sit in the fridge for at least an hour to let the ingredients marry and for the sugar to dissolve and not be gritty. Just toss well before serving. It's delicious. Enjoy.

Asparagus Tomato Red Bell Pepper Soup

I have Lupus and am "supposed to" eat healthy as much as I can. I learned that tomatoes, containing significant amounts of lycopene, and red peppers, containing significant amounts of beta carotene, are good sources of antioxidants. So I dine on this often. The asparagus gives the bell pepper a lovely dimension and the nutmeg tops it off.

Green Beans With Red Peppers And Garlic

This light and flavorful side side is also a feast for the eyes, with its bright colors dottings of garlic. It comes together quickly and is simple to prepare. It's also easy to substitute in other vegetables so long as they are cut into the right shape.
