Day-Old Coffee is the key to this flavorful beef roast that simmers in the slow cooker until it's fall-apart tender. Adapted from Charles Trahan's recipe posted in Light and Tasty magazine February/ March 2003 along with the photo.

Leftovers Turkey Soup

Finding a way to use not only the leftover turkey after a big Thanksgiving dinner, but also some of the sides. Peas and Carrots, sure, throw them in, green beans? You betcha. Wild rice? Absolutely. Just be sure they have not been cooked with a sweet sauce or other intrusive flavor.

Slow Cooker Beef Bourguignon

Beef Bourguignon (French: Bœuf bourguignon) is a well-known, traditional French recipe. It's a stew prepared with beef braised in red wine (preferably an assertive wine such as Burgundy because bourguignon means "of Burgundy", hence the literal translation is beef burgundy) and beef broth, generally flavoured with garlic, onions, carrots, and a bouquet garni, and garnished with pearl onions and mushrooms. Traditionally the meat was larded with lardons, but modern beef is sufficiently tender and well marbled that this very time-consuming technique is rarely used anymore. However, bacon cut into small cubes is still used to produce the initial cooking fat and added to the dish at the end. Put the ingredients in the slow cooker in the morning, and the meal is ready by dinner time. Serve with broad egg noodles or mashed potatoes & peas, if desired.
