Southwest Eggs

From the California Avocado Commission
Because this recipe uses California Avocados...it is definitely nutritious!
I only made 1 change in this recipe, the olives are my addition. The family loves this especially when made with homemade green chili verde.

Shrimp And Scallop Posole

I have tried many varieties of posole and pretty much loved them all. Posole, a hearty and comforting Mexican soup, is traditionally prepared with pork or chicken. Shrimp and scallops here make this version special enough for a party. This is from Bon Appetit, one of my favorite magazines and references. Enjoy.
