Eggs Planted Parmesan

I love this dish & don't make it often enough because of the time it takes. But there are some cheats. Such as bottled tomato sauce that you doctor & getting someone to help you cook it. I imagine that you can also use pre-grated cheese as well.
Normally when I make it I use Ricotta, Provolone, Mozzarella & Parmesan/Romano cheeses. This time I didn't feel like driving down the mountain to shop for all the ingredients, so I made do with what I had on hand. This is the result. It was good the first day & better the next.

BAs Swiss Steak

My wife, the daughter of a Swiss butcher, makes this for Sunday dinner when it's her turn to cook. It is so warm and comfortable food. Mashed potatos, corn, and a nice tall cold glass of milk fills the tummy.

Two Orange Chickens

Subtle flavors of orange and ginger put an autumn zest into a simple chicken and sweet potato recipe.

Makes a hearty main dish for 2 medium-sized appetites with a small lunch for tomorrow, or creates 3 servings for medium-sized appetites with a side veggie thrown in (see our recommendations below).

Though this dish requires some small attention during the baking time, this is really an excellent entree designed to impress but with minimal preperation on the part of the chef. It can be prepared in advance or makes a fun dish to manage while chatting in the kitchen with friends!
