Leftover Taco Omelets

It was “Taco Saturday” at our house, when we have mom over for her beloved taco fest. This particular night, I made way too much taco meat, and while I usually use any leftovers to make a Taco Pizza the next day, I wanted something different. Mexican Omelets are always on our favorite breakfast restaurant menu, so I decide to give it a try – it was a good decision! The leftovers made a great omelet, and we started the day off with a spicy kick to get us going…perfect.

Diesel Coffee

I am currently using Cafe' Bustelo found in the mexican isle. I've also previously used starbucks Guatamala Antigua or eight o'clock regular whole bean. Grind them yourself at the finest grind. this recipe makes enough to fill a large thermos and one 16oz to-go cup for one. Because as I always say until caffiene is injectable I have to drink it.

Spinach Romaine Salad With Poppy Seed Dressing

Yet another recipe I gleened from an office potluck, back in the day when people actually prepared something from scratch for such events! One of my co-workers would often bring this in, and we would compete for who got to lick the bowl clean when all the contents were gone (and quickly). The homemade dressing is just excellent on this, and worth the few minutes it takes to prepare. I have posted that seperately under Poppyseed Dressing in the Blender.
