Classic Clam Chowder Recipe

Ingredients
  • 9 new potatoes, cut into 1/2 -inch cubes
  • 1/2 c heavy cream
  • 1/2 tsp dried thyme leaves
  • 1 large onion, cut into medium dice
  • 2 (8 oz) bottles clam juice
  • 2 bay leaves
  • 4 (6.5 oz) cans minced clams (clams & juice separated)
  • 1 1/2 c leftover mashed potatoes
  • Salt & pepper, to taste
  • 2 tbsps minced fresh parsley
  • 2 slices thick-cut bacon, cut into small dice
  • 1 c water

Directions
  • Step #1 In a large soup kettle, fry bacon over med-heat/flame until bacon crisps, about 5 mins.
  • Step #2 Remove bacon; set aside.
  • Step #3 Keep 2 tbsps bacon fat in pan.
  • Step #4 (If necessary, add oil to yield 2 tbsps.
  • Step #5 ) Add onion & saute until soft, about 5 mins.
  • Step #6 Add thyme & bay leaves; cook this until fragrant, 30 seconds or so.
  • Step #7 Whisk in mashed potatoes, clam juice (bottled & what you've drained from the clams) & 1 c of water.
  • Step #8 Add new potatoes & bring to a simmer.
  • Step #9 Reduce heat; continue to simmer, until potatoes are tender, partially covered, about 10 mins.
  • Step #10 Stir in clams, cream & parsley; season this with salt & pepper.
  • Step #11 Heat through & serve, garnishing each bowl with reserved bacon.
