Ingredients
9 new potatoes, cut into 1/2 -inch cubes
1/2 c heavy cream
1/2 tsp dried thyme leaves
1 large onion, cut into medium dice
2 (8 oz) bottles clam juice
2 bay leaves
4 (6.5 oz) cans minced clams (clams & juice separated)
1 1/2 c leftover mashed potatoes
Salt & pepper, to taste
2 tbsps minced fresh parsley
2 slices thick-cut bacon, cut into small dice
1 c water
Directions
Step #1 In a large soup kettle, fry bacon over med-heat/flame until bacon crisps, about 5 mins.
Step #2 Remove bacon; set aside.
Step #3 Keep 2 tbsps bacon fat in pan.
Step #4 (If necessary, add oil to yield 2 tbsps.
Step #5 ) Add onion & saute until soft, about 5 mins.
Step #6 Add thyme & bay leaves; cook this until fragrant, 30 seconds or so.
Step #7 Whisk in mashed potatoes, clam juice (bottled & what you've drained from the clams) & 1 c of water.
Step #8 Add new potatoes & bring to a simmer.
Step #9 Reduce heat; continue to simmer, until potatoes are tender, partially covered, about 10 mins.
Step #10 Stir in clams, cream & parsley; season this with salt & pepper.
Step #11 Heat through & serve, garnishing each bowl with reserved bacon.
