Cheesy Rye Bread Recipe

Ingredients
  • 1/2 c molasses
  • extra cornmeal
  • 3 c all-purpose flour
  • 1/2 c cornmeal
  • 1/2 lb Cheddar cheese, cut into 1/4 inch cubes
  • 2 tsps salt
  • 2 tbsps active dry yeast
  • 2 c rye flour
  • 1/2 c warm water (110 degrees F to 115 degrees F)
  • 1/4 c butter, cubed
  • 1 3/4 c water

Directions
  • Step #1 In a saucepan over med-heat/flame, bring water, cornmeal & salt to a boil; stir until thickened.
  • Step #2 Remove from the heat; stir in the butter & molasses.
  • Step #3 Cool to about room temp.
  • Step #4 In a large mixing bowl, dissolve yeast in warm water.
  • Step #5 Add the cornmeal mixture, rye flour & 1 c all purpose flour; beat until smooth.
  • Step #6 Stir in enough remaining all-purpose flour to form a stiff dough.
  • Step #7 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
  • Step #8 Place in a greased bowl, turning once to grease top.
  • Step #9 Cover & let rise in a warm place until doubled, about 1-1/2 hrs.
  • Step #10 Punch the dough down.
  • Step #11 Turn onto a floured surface; knead cheese cubes into the dough.
  • Step #12 Divide into three portions; shape each portion into a 5-in.
  • Step #13 round loaf.
  • Step #14 Sprinkle top greased baking sheets with cornmeal.
  • Step #15 Place loaves on prepared pans.
  • Step #16 Cover & let rise until doubled, about 1 hr.
  • Step #17 Bake at 350 degrees Ffor 40-45 mins or until golden brown.
  • Step #18 Remove from pans to wire racks to cool.
  • Step #19 Store in the refrigerator.
