Chicken Bog Recipe

Ingredients
  • 1 (3 lb) whole chicken
  • 6 c water
  • 1/2 lb smoked sausage of your choice, sliced
  • 2 cubes chicken bouillon
  • 2 tbsps Italian-style seasoning
  • 3 1/2 c chicken broth
  • 1 onion, sliced
  • 1 c long-grain white rice
  • 1 tbsp salt

Directions
  • Step #1 Place water, salt & onion in a large pot.
  • Step #2 Add chicken & bring all to a boil; cook this until chicken is tender, about 1 hr.
  • Step #3 Remove chicken from pot & let cool.
  • Step #4 Remove skin & bones & chop remaining meat into bite size pieces.
  • Step #5 Skim off fat from cooking liquid & measure 3 1/2 c of this chicken broth into a 6-quart saucepan.
  • Step #6 Add rice, chicken pieces, sausage, herb seasoning & bouillon to this saucepan.
  • Step #7 Cook all together for 30 mins; let come to a boil, then reduce heat to low, keeping pan covered the whole time.
  • Step #8 If mixture is too watery or juicy, cook over medium low heat, uncovered, until it reaches the desired consistency.
  • Step #9 Stir often while cooking.
