Cherry Enchiladas Recipe

Ingredients
  • 1/2 c white sugar
  • 1 tbsp crushed sliced almonds
  • 5 (10 inch) flour tortillas
  • 2 tbsps white sugar
  • 1 (21 oz) can cherry pie filling
  • 1/2 c butter
  • 1/2 c water
  • 1/2 tsp ground cinnamon

Directions
  • Step #1 Grease a 9x13 inch baking dish.
  • Step #2 Combine the water, butter & 1/2 c of sugar in a small saucepan & bring to a boil.
  • Step #3 Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla.
  • Step #4 Roll up & place seam side down in the baking dish.
  • Step #5 Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely.
  • Step #6 The mixture will be watery.
  • Step #7 Cover & put in the fridge overnight.
  • Step #8 Preheat the oven to 375 degrees F (190 degrees C).
  • Step #9 Combine 2 tbsps sugar, cinnamon & almonds in a small bowl or c; sprinkle it over the top of the enchiladas.
  • Step #10 Bake for 35 to 40 mins in the preheated oven, or until outside edges of the tortillas are golden brown.
  • Step #11 Let cool slightly before serving.
