Crispy Orange Beef Recipe

Ingredients
  • 1 tsp salt
  • 1 1/2 tbsps minced garlic
  • 1/4 c cornstarch
  • 1/3 c rice wine vinegar
  • 1 c long grain rice
  • 1 1/2 lbs beef top sirloin, thinly sliced
  • 2 tsps orange zest
  • 1 tbsp soy sauce
  • 2 c water
  • 8 broccoli florets, lightly steamed or blanched
  • 2 tbsps frozen orange juice concentrate
  • 3 tbsps grated fresh ginger
  • 2 c oil for frying
  • 1/3 c white sugar

Directions
  • Step #1 Lay beef strips out in a single layer on a baking sheet lined with paper towels.
  • Step #2 Allow to dry in the refrigerator for 30 mins.
  • Step #3 In a small bowl, orange juice concentrate, mix together the sugar, rice vinegar, salt & soy sauce.
  • Step #4 Set aside.
  • Step #5 Meanwhile, mix rice & water in a medium saucepan.
  • Step #6 Bring to a boil, then reduce heat to medium-low & let simmer for 20 mins, or until rice is tender.
  • Step #7 Add more water at the end if necessary.
  • Step #8 Heat oil in a wok over medium-high heat.
  • Step #9 Toss dried beef in cornstarch to coat.
  • Step #10 Fry in the hot oil in small batches until crispy & golden brown; set aside.
  • Step #11 Drain all of the oil from the wok except about 1 tbsp.
  • Step #12 Add orange zest, ginger & garlic to the remaining oil, & cook briefly until fragrant.
  • Step #13 Add the soy sauce mixture to the wok, & cook this until thick & syrupy, bring to a boil, about 5 mins.
  • Step #14 Add beef, & heat through, stirring to coat.
  • Step #15 Serve as soon as possible over steamed rice, & garnish with broccoli.
