Ingredients
  • 1/2 tsp baking powder .
  • 2 tbsps granulated sugar substitute .
  • 1/4 tsp cream of tartar .
  • 3 egg whites .
  • 2 c unsalted popped popcorn .
  • 1/4 tsp salt

Directions
  • Step #1 Place popped corn in food processor/blender or food grinder.
  • Step #2 Grind into kernel-size pieces.
  • Step #3 Beat egg whites until frothy & add baking powder, salt & cream of tartar.
  • Step #4 Beat into stiff peaks.
  • Step #5 Add sugar replacement, beating until well mixed.
  • Step #6 Fold popcorn pieces into stiffly beaten egg whites.
  • Step #7 Drop by tspfuls onto lightly greased cookie sheets.
  • Step #8 Bake at 350 F for 12 to 14 mins or until lightly browned.
  • Step #9 Yield 36 cookies.
