Grainary Bread Recipe

Ingredients
  • 1 egg white .
  • 1 1/2 tsps salt .
  • 1 tbsp wheat gluten (optional) .
  • 2 tsps fast rising yeast .
  • 1/2 c soy flour .
  • 1/2 c nonfat milk .
  • 2 tbsps walnut oil .
  • 1 1/4 c bread flour .
  • 1/4 c ground flax seeds .
  • 1/4 c oat flour .
  • 1 1/4 c whole wheat flour .
  • 1/4 c scottish oatmeal .
  • water

Directions
  • Step #1 Bring milk to 100 degrees (try microwaving 20 seconds on high).
  • Step #2 Sprinkle top the yeast over the milk, let this stand 5 mins.
  • Step #3 Stir to dissolve.
  • Step #4 Mix flours, flax, oatmeal & salt In a large-ish bowl.
  • Step #5 make a well in the center & pour in dissolved yeast.
  • Step #6 Draw enough flour into the yeast to make a soft paste.
  • Step #7 Cover up & let paste "sponge" for 20 mins.
  • Step #8 Combine egg white & oil in a glass measuring c, wisk to incorporate.
  • Step #9 add enough water to make 1 c total.
  • Step #10 Slowly pour water mixture into flour to form a firm, moist dough.
  • Step #11 You may need to add more flour if the dough is to sticky, do this 1 tsp at a time.
  • Step #12 Turn dough onto floured surface & knead about 10 mins.
  • Step #13 flatten dough stightly with your hands & shape the dough for a loaf pan.
  • Step #14 Grease a 8" x 4" loaf pan with oil.
  • Step #15 place dough seam side down.
  • Step #16 cover with a dish towel & proof for 60 mins.
  • Step #17 OPTIONAL after 30 min proof: With a sharp knife or razor blade make a 1/2 inch slit down the center of the loaf.
  • Step #18 Preheat oven to 425, bake loaf for 20 mins, reduce heat to 400F & bake an extra 15 mins.
  • Step #19 NOTE: This can all be done with your upright mixer & a dough hook.
