Raspberry Coconut Slice Recipe

Ingredients
  • TOPPING .
  • 1/2 c butter .
  • 1/2 c raspberry jam (or your favourite) .
  • 4 eggs, lightly beaten .
  • BASE .
  • 1/3 c self-raising flour .
  • 2/3 c caster sugar (fine suagr) .
  • 1 egg .
  • 2/3 c plain flour (all purpose) .
  • 1/2 c caster sugar (fine sugar) .
  • 4 c coconut .
  • FILLING

Directions
  • Step #1 BASE.
  • Step #2 Beat butter, sugar & egg in a mixing bowl with electric mixer until mixd.
  • Step #3 Stir in sifted flours.
  • Step #4 Spread mixture over base of a greased 19cm x 29cm slice pan.
  • Step #5 I like to line it with baking paper.
  • Step #6 This makes it easier to remove once it's cooled.
  • Step #7 Bake at 180c or 350f for about 10 mins.
  • Step #8 FILLING.
  • Step #9 Spread hot base with raspberry jam, or jam of your choice.
  • Step #10 TOPPING.
  • Step #11 Combine 4 eggs, caster sugar & coconut in a mixing bowl & mix well.
  • Step #12 Spread over base & cook for a further 25 - 30 mins or until golden brown on top.
  • Step #13 Once cooled slice into desired size slices.
  • Step #14 This keeps well in the pantry in an air tight container.
  • Step #15 If serving to friends & family this wont last long.
