Mexican Vegetables On Cornbread Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 2 tbsps vegetable oil .
  • 2 c onions, sliced .
  • 1 tsp ground coriander .
  • 1 tbsp fresh cilantro, sliced (optional) .
  • 1 medium zucchini, cut into half-moons .
  • salt .
  • 1 green pepper, sliced .
  • 2 c corn, fresh or frozen .
  • extra tomato juice, if needed .
  • cayenne .
  • 2 c undrained canned tomatoes, sliced .
  • 3 carrots, cut into half-moons .
  • 1 tsp ground cumin

Directions
  • Step #1 In a large skillet, saute the onions & garlic in oil for 5 mins.
  • Step #2 Add the carrots, cover, & saute for 5 more mins, stirring every once in awhile.
  • Step #3 Stir in the remaining vegetables & seasonings & cook on low heat until vegetables are just tender.
  • Step #4 The mixture should be saucy; add more tomato juice if necessary.
  • Step #5 Serve over hot corn bread & top this with sour cream or cheese.
