Pineapple Coconut Bread Recipe

Ingredients
  • 1 egg yolk .
  • 1 c crushed pineapple .
  • 2 tbsps cornstarch .
  • 1 c sugar .
  • 1 tbsp instant yeast .
  • 1/3 c sugar .
  • 1 c unsweetened coconut .
  • Pinapple or Coconut Mixture .
  • 1 3/4 c water .
  • 1/2 tsp salt .
  • 2 tbsps shortening .
  • 4 1/2 c gluten flour

Directions
  • Step #1 Pinapple/Coconut Mixture:.
  • Step #2 Combine pineapple & coconut in bowl.
  • Step #3 Combine sugar & cornstarch in separate bowl & mix well.
  • Step #4 Add sugar & cornstarch mixture into pineapple & coconut mixture & mix well.
  • Step #5 Refrigerate for 1 hr.
  • Step #6 Bread:.
  • Step #7 Combine all ingredients in order of recipe in mixing bowl, & mix with dough hook until.
  • Step #8 dough picks up on hook & the sides of the mixing bowl is clean.
  • Step #9 Let dough rise until it doubles in size.
  • Step #10 Roll out dough onto a floured surface until it is 2 inches thick.
  • Step #11 Next spread pineapple/coconut mixture over the top of the dough.
  • Step #12 Fold dough into itself & place this in a greased 9" x 13" cake pan.
  • Step #13 Cut dough into pieces with a pizza cutter & spread out cut pieces evenly in cake pan.
  • Step #14 Let dough rise in warm oven (110 degrees F) - about half way up the pan.
  • Step #15 Bake at 325F degrees F for 20-25 mins or until golden brown.
  • Step #16 Let bread cool, cut & serve.
