Rum Pudding Recipe

Ingredients
  • 1 c whipping cream, whipped .
  • 1/2 c rum .
  • 3/4 c granulated sugar .
  • 1/4 c cold water .
  • 1 pint hot milk .
  • 5 egg yolks, beaten .
  • 1 tbsp plain gelatin (see equilavents at bottom of recipe)

Directions
  • Step #1 Soak gelatin in cold water until soft.
  • Step #2 Beat egg yolks with sugar until frothy & lemon-colored, then slowly add hot milk, stirring constantly.
  • Step #3 Pour the mixture into top of a double boiler over boiling water, & cook for a few mins until smooth & creamy.
  • Step #4 Add gelatine mixture to this; mix well, then cool.
  • Step #5 When cream is cool, add rum & whipped cream.
  • Step #6 Pour into a mold & chill for several hrs.
  • Step #7 Serve with raspberry sauce or whipped cream.
  • Step #8 Note: Gelatin equilavents are One envelope of plain granulated gelatin = 1/4 oz = 1 tbsp, enough to gel two c liquid.
