Quick Chicken Cacciatore Recipe

Ingredients
  • 3 tbsps balsamic vinegar .
  • salt, to taste .
  • 1 lb rigatoni pasta or penne .
  • 3 minced garlic cloves .
  • 3 portabella mushroom caps, halved & sliced thin .
  • 3 tbsps extra virgin olive oil .
  • 4 boneless skinless chicken breasts (or thighs) .
  • 1 (28 oz) can crushed tomatoes .
  • 1/3 c sliced flat leaf parsley .
  • fresh grated parmesan cheese .
  • 1/4 tsp crushed red pepper flakes

Directions
  • Step #1 Cook pasta to desired done-ness.
  • Step #2 Rub chicken breasts or thighs with the balsamic vinegar.
  • Step #3 Heat a large nonstick skillet over high heat.
  • Step #4 Cook the chicken 5 mins per side & remove this from heat.
  • Step #5 Meanwhile, heat garlic & red pepper flakes in oil until garlic starts making noise.
  • Step #6 Add portobellos, coat with oil, then sprinkle them with salt, & cover.
  • Step #7 Check after 5 mins.
  • Step #8 You should have a dark gravy of portobello juices at this time.
  • Step #9 If the mushrooms are not dark & soft, cover, toss them, & cook another couple of mins.
  • Step #10 Add the tomatoes & parsley.
  • Step #11 Sauce should be a rich reddish brown.
  • Step #12 Slice chicken diagonally & add to the sauce.
  • Step #13 Heat through.
  • Step #14 Add the pasta, toss & pour onto a serving platter.
  • Step #15 Top with grated parmesan cheese.
