Durango Chicken Recipe

Ingredients
  • 2 cloves .
  • 2 tbsps cooking oil .
  • 2 garlic cloves, finely sliced .
  • 2 c cooking sherry .
  • 2 tbsps sugar .
  • 1/2 c sliced almonds .
  • 3 sliced tomatoes .
  • 1/4 tsp black pepper .
  • 1/4 tsp grated nutmeg .
  • 1 cinnamon stick .
  • 12 chicken pieces (thighs & legs) .
  • 1 medium onion, sliced .
  • 1/2 lb ham, in thin strips .
  • 1/2 c raisins .
  • 2 tbsps cooking oil .
  • 1 c chorizo sausages, in slices

Directions
  • Step #1 Fry the chicken pieces in hot oil,until browned.
  • Step #2 Set them aside.
  • Step #3 In the same oil sautee garlic & onion.
  • Step #4 Once they are shirred & transluscent, add the ham & chorizo & let simmer til chorizo is cooked.
  • Step #5 Add tomato, cinnamon, sugar, cloves, nutmeg & peper & cook this until liquid reduces somewhat.
  • Step #6 Add chicken, raisins & almons.
  • Step #7 Douse with the sherry, reduce burner heat & let simmer until chicken is well cooked.
