Cornbread Stuffing Southern Style Recipe

Ingredients
  • 1 tsp ground black pepper
  • 2 (8.5 oz) packages dry corn muffin mix
  • 2 celery, finely sliced
  • 1/2 c plain yogurt
  • 1 tsp dried basil
  • 2 tsps salt, or to taste
  • 1 onion, finely sliced
  • 2 tsps dried oregano
  • 1 (8 oz) can cream-style corn
  • 2 tsps dried thyme
  • 1/2 c butter
  • 2 eggs, beaten
  • 1/4 c milk
  • 1/4 tsp cayenne pepper
  • 4 cloves garlic, minced
  • 1 green bell pepper, finely sliced
  • 3 c chicken broth

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Lightly grease a 9x13 inch baking dish.
  • Step #3 In a medium bowl mix muffin mix, corn, eggs, yogurt & milk; stir just until moistened.
  • Step #4 Pour into prepared pan.
  • Step #5 Bake in preheated oven for 20 mins, or until golden brown.
  • Step #6 Meanwhile, in a large saucepan over med-heat/flame, melt butter & saute onion, celery, green pepper & garlic.
  • Step #7 When onions are tender stir in the thyme, salt, oregano, basil, pepper, cayenne & broth.
  • Step #8 Bring to a boil & then remove this from heat.
  • Step #9 Crumble the cornbread & stir in theto broth mixture; mix well.
  • Step #10 Add more broth or more bread, as necessary, to achieve desired consistency.
