Butterscotch Pudding Recipe

Ingredients
  • 1/2 c packed light brown sugar .
  • 1/2 tsp salt .
  • 1 tsp vanilla extract .
  • 2 1/4 c milk .
  • 3 tbsps cornstarch .
  • 2 tbsps unsalted butter

Directions
  • Step #1 In small bowl, stir this together cornstarch & 1/4 c of brown sugar.
  • Step #2 Set aside.
  • Step #3 melt butter over medium-low heat.
  • Step #4 Cook 1 min or until foam subsides & butter just begins to brown.
  • Step #5 Stir in remaining 1/4 c brown sugar & cook 2 mins or until melted.
  • Step #6 Gradually stir in the milk until well mixed.
  • Step #7 (Don't be concerned if sugar hardens, it will melt again.
  • Step #8 ) Stir in salt.
  • Step #9 Cook, stirring constantly, until mixture just comes to a boil.
  • Step #10 Pour some of hot mixture into cornstarch mixture & stir until smooth.
  • Step #11 Stir cornstarch mixture back into hot milk mixture & cook, stirring constantly, until mixture returns to a boil.
  • Step #12 Boil 1 min.
  • Step #13 Remove from heat; stir in the vanilla, & spoon into 4 dessert dishes.
  • Step #14 Cool to about room temp, cover, & put in the fridge until well chilled.
