Moroccan Lemon Chicken With Summer
Ingredients
13 oz can artichoke hearts, drained & halved (reserve the brine) .
1 tsp dried thyme .
1 pinch saffron .
1/4 c fresh lemon juice .
3 c vegetable stock .
3 garlic cloves, minced .
2 c cubed fresh tomatoes .
salt & pepper .
1 1/2 c sliced onions .
1/2 c pitted black olives, halved .
1/3 c olive oil .
1 c sliced green beans .
3 c cubed potatoes .
1 red bell pepper, sliced .
1/4 c sliced fresh parsley
Directions
Step #1 Saute the onions & garlic in olive oil until onions are translucent.
Step #2 Add the thyme, green beans, bell pepper, potatoes, & tomatoes & cook on medium-high heat for 3 mins, stirring every once in awhile.
Step #3 Add the vegetable stock & the artichoke brine & let simmer, covered until the vegetables are tender, about 20 mins.
Step #4 Stir in the halved artichoke hearts, the black olives & a pinch of saffron.
Step #5 Continue to simmer for another 5-10 mins.
Step #6 Add the lemon juice, parsley, & salt & pepper to taste.
