Moroccan Stew Recipe

Ingredients
  • 13 oz can artichoke hearts, drained & halved (reserve the brine) .
  • 1 tsp dried thyme .
  • 1 pinch saffron .
  • 1/4 c fresh lemon juice .
  • 3 c vegetable stock .
  • 3 garlic cloves, minced .
  • 2 c cubed fresh tomatoes .
  • salt & pepper .
  • 1 1/2 c sliced onions .
  • 1/2 c pitted black olives, halved .
  • 1/3 c olive oil .
  • 1 c sliced green beans .
  • 3 c cubed potatoes .
  • 1 red bell pepper, sliced .
  • 1/4 c sliced fresh parsley

Directions
  • Step #1 Saute the onions & garlic in olive oil until onions are translucent.
  • Step #2 Add the thyme, green beans, bell pepper, potatoes, & tomatoes & cook on medium-high heat for 3 mins, stirring every once in awhile.
  • Step #3 Add the vegetable stock & the artichoke brine & let simmer, covered until the vegetables are tender, about 20 mins.
  • Step #4 Stir in the halved artichoke hearts, the black olives & a pinch of saffron.
  • Step #5 Continue to simmer for another 5-10 mins.
  • Step #6 Add the lemon juice, parsley, & salt & pepper to taste.
