Step #1 Heat oven to 200*F.
Step #2 Heat 1 TBS olive oil in a skillet over med-heat/flame.
Step #3 Add onion, 1/2 tsp salt, & 1/8 tsp pepper.
Step #4 Cook until the onions are translucent, about 5 mins.
Step #5 Set aside.
Step #6 Cut fish into large chunks; pulse in a food processor/blender to coarsely chop.
Step #7 Transfer to a medium bowl.
Step #8 Add onion, tarragon, egg & Tabasco, combining well.
Step #9 Add remaining salt & pepper.
Step #10 Form 8 3-inch patties; dredge them in bread crumbs, shaking off excess.
Step #11 Heat 1 TBS oil In a large-ish skillet, over medium low heat.
Step #12 Cook 4 patties until browned, about 4 to 5 mins on each side.
Step #13 Remove to a baking sheet, cover with aluminium foil wrap, & keep warm in oven while you cook the other 4.
Step #14 Wipe out skillet, return to heat & add in the remaining oil.
Step #15 Cook remaining patties & serve as soon as possible with tartar sauce.
