Quinoa Pudding Recipe

Ingredients
  • 1/4 c slivered almonds or sliced almonds .
  • 6 c water .
  • cooking spray .
  • 1/8 tsp salt .
  • 1/4 c dried currants .
  • 1 tbsp sugar .
  • 1/8 tsp cinnamon .
  • 2 egg whites .
  • 3/4 c sugar, plus .
  • 1 c quinoa, cleaned (6 oz) .
  • 2 eggs .
  • 2 tbsps dry non-fat powdered milk .
  • 1 tsp vanilla .
  • 1 c nonfat milk

Directions
  • Step #1 Place quinoa in a bowl of water.
  • Step #2 Begin the cleaning by rubbing the grain together between your hands.
  • Step #3 Drain & repeat several times.
  • Step #4 You will know the quinoa is clean when the water is no longer milky after rubbing.
  • Step #5 This step is essential for removing the bitter layer that surrounds the grain.
  • Step #6 Bring quinoa & 6 c water to a boil In a large-ish saucepan.
  • Step #7 Reduce heat & let simmer, uncovered, until grains are translucent, 13 to 15 mins.
  • Step #8 Drain well in a sieve.
  • Step #9 Preheat oven to 350°F.
  • Step #10 To measure milk, place powdered milk in measuring c & add milk to one c.
  • Step #11 Stir together to dissolve milk powder.
  • Step #12 If you do not have powdered milk, its best to use whole milk.
  • Step #13 Whisk together eggs, 3/4 c sugar, vanilla, milk, egg whites, & salt In a large-ish bowl until just mixd.
  • Step #14 Mix in quinoa, nuts, & currants.
  • Step #15 Pour into a buttered 9-inch square baking pan prepared with a coat of cooking spray.
  • Step #16 Stir together cinnamon & remaining tbsp sugar & sprinkle it over top of pudding.
  • Step #17 Bake until a knife inserted in center comes out clean, around 40 mins.
  • Step #18 Serve warm or at about room temp.
