6 tbsps cold unsalted butter, cut into small chunks .
1/4 tsp ground cinnamon .
1 c maple syrup .
1/2 tsp baking soda
Directions
Step #1 Preheat the oven to 350 degrees.
Step #2 To make the crumbs mix the flour, salt, brown sugar, & cinnamon In a large-ish bowl.
Step #3 Add the butter & mix until the mixture becomes a sticky crumb-like texture.
Step #4 Set it aside.
Step #5 Make the maple filling by heating the maple syrup In a large-ish bowl in the microwave until slightly warm.
Step #6 Use a wisk to add the baking soda.
Step #7 Beat together the eggs in a small bowl until just frothy.
Step #8 Wisk the eggs & vanilla into the maple syrup.
Step #9 Sprinkle top half of the crumbs into the bottom of the pie crust.
Step #10 Pour the maple filling on top of the crumbs in the crust.
Step #11 Sprinkle top the rest of the crumbs on top.
Step #12 Bake the pie for 30 mins, or until the pie has puffed up & turned golden brown.
Step #13 The crumbs from the bottom of the pie will rise to the top, as the crumbs will absorb the remaining liquid, & the pie should look slightly underdone, allowing the pie to set.
