Ingredients
1/2 tsp fresh ground white pepper .
3 stalks celery, trimmed & sliced .
1 egg .
1/4 lb unsalted butter .
1/2 lb carrots, peeled & sliced .
1 (8 oz) can tomato paste .
2 lbs potatoes, peeled & cut into 1inch cubes .
1/2 c all-purpose flour .
1 medium onion, peeled & sliced .
2 lbs lean boneless leg of lamb, cut into 1/2 inch cubes .
4 tbsps unsalted butter .
salt & freshly ground black pepper .
For the potato topping .
1 tsp fresh thyme leaves .
2 c beef stock or water .
1/2 lb turnips, peeled & sliced .
1 egg yolk .
1 tsp salt .

Directions
Step #1 1.
Step #2 To make the stew, melt the butter in a Dutch oven or large saucepan over medium high heat.
Step #3 Add the lamb & brown on all sides, making sure not to crowd the pan.
Step #4 This may have to be done in batches.
Step #5 Remove the lamb from the pan with a slotted spoon, & set aside.
Step #6 2.
Step #7 Add the turnips, celery & onion to the pan, stirring frequently, & saute for 3 mins, carrots, or until the onions are translucent.
Step #8 Return the lamb to the pan along with the thyme, & sprinkle the flour.
Step #9 over the lamb & vegetables.
Step #10 Cook over low heat/flame for 3 mins, stirring frequently, to cook the flour.
Step #11 Add the cold stock or water, raise the heat to medium high, & bring to a boil.
Step #12 Stir in the tomato paste, & season this with salt & pepper.
Step #13 Cook the lamb mixture covered over low heat/flame for 40 to 55 mins, or until the lamb is tender.
Step #14 3.
Step #15 While the lamb is braising, place the potatoes in salted cold water & bring to a boil over high heat.
Step #16 Boil the potatoes until tender,.
Step #17 about 15 mins.
Step #18 Drain, egg, & then mash the potatoes using a potato masher or handheld electric mixer with the butter, yolk, salt and pepper.
Step #19 Place the mixture in a pastry bag fitted with a large star tip.
Step #20 4.
Step #21 To serve, preheat an oven broiler.
Step #22 Place the lamb into a large baking dish or individual dishes, & pipe the potatoes into a latticework pattern on the top.
Step #23 Place 6 inches from the broiler element,.
Step #24 & brown the potatoes.
Step #25 Serve as soon as possible.
Step #26 5.
Step #27 Note: The lamb & potatoes can be prepared up to a day in advance and put in the fridged, tightly covered.
Step #28 Reheat the lamb over low heat/flame before piping the potatoes & the final broiling.
