Kim Chee Recipe

Ingredients
  • 1/2 c light soy sauce .
  • 1 tbsp chili powder .
  • 1 garlic clove, crushed .
  • 1 dash sesame oil .
  • 2 tsps white sugar .
  • 2 lbs Chinese cabbage, coarsely sliced .
  • 1/2 c white wine vinegar .
  • 2 tbsps green onions, sliced .
  • 2 tsps gingerroot, minced .
  • 1 tbsp salt

Directions
  • Step #1 Place the cabbage into a large dish, & sprinkle with salt.
  • Step #2 Let stand for 3 to 4 hrs.
  • Step #3 The cabbage will wilt.
  • Step #4 After the cabbage has been sitting, massage it with your hands until it is even softer.
  • Step #5 Drain off the liquid.
  • Step #6 Mix in the green onion, vinegar, ginger, soy sauce, garlic, chili powder, & sugar.
  • Step #7 Transfer to a large glass jar, & put in the fridge for 24 hrs before using.
  • Step #8 This will keep for about a week in the refrigerator.
  • Step #9 Sprinkle top with sesame oil before serving.
