Pickled Corn Chunks Recipe

Ingredients
  • 2 small onions, sliced thin .
  • 1/2 tsp ground red pepper .
  • 1 1/2 tsps mustard seeds .
  • 2 c white vinegar .
  • 1 1/4 tsps celery seeds .
  • 1 1/4 tsps salt .
  • 4 ears fresh corn .
  • 1 1/4 c water

Directions
  • Step #1 remove husks & silks from corn & cut into 1 1/2" chunks.
  • Step #2 in a deep saucepan mix remaining ingredients, bring to a boil & boil 2 mins.
  • Step #3 add corn chunks & cook 5 mins longer.
  • Step #4 pack into hot sterilized pint jars & seal --.
