Date Nut Logs Recipe

Ingredients
  • 1 pinch salt
  • 3 egg whites
  • 1/2 c sliced walnuts
  • 1/2 tsp baking powder
  • 1/3 c confectioners' sugar for decoration
  • 1 c all-purpose flour
  • 2/3 c dates, pitted & sliced
  • 1 c white sugar

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Lightly grease one 9 inch square baking pan.
  • Step #3 Combine flour & baking powder & set aside.
  • Step #4 In a large, clean glass or metal bowl, whip egg whites & salt & until foamy.
  • Step #5 Gradually add sugar & continue to whip until stiff (but not dry).
  • Step #6 Gradually fold in dry ingredients then fold in dates & nuts.
  • Step #7 Spread evenly in prepared pan.
  • Step #8 Bake for 20-30 mins or until firm to touch.
  • Step #9 Cool in pan until just cool enough to handle.
  • Step #10 Cut into finger-sized lengths & roll between palms to form logs.
  • Step #11 Roll each log in confectioners' sugar.
  • Step #12 Cool completely on wire rack.
