Coconut Raspberry Bars Recipe

Ingredients
  • 1/2 c sliced walnuts
  • 1 egg
  • 1/2 tsp vanilla extract
  • 2 c all-purpose flour
  • 1 c vanilla chips
  • 1 c sugar
  • 1/4 tsp baking powder
  • 1 (12 oz) jar raspberry preserves
  • 2 c flaked coconut, divided
  • 3/4 c butter or margarine, softened

Directions
  • Step #1 In a mixing bowl, cream butter & sugar.
  • Step #2 Beat in egg & vanilla.
  • Step #3 Combine flour & baking powder; slowly add to the creamed mixture.
  • Step #4 Stir in 1-1/4 c coconut & the walnuts.
  • Step #5 Press three-fourths of the dough into a greased 13-in.
  • Step #6 x 9-in.
  • Step #7 x 2-in.
  • Step #8 baking pan.
  • Step #9 Spread with preserves.
  • Step #10 Sprinkle top with chips & remaining coconut.
  • Step #11 Crumble remaining dough over the top; press lightly.
  • Step #12 Bake at 350 degrees F for 30-35 mins or until golden brown.
  • Step #13 Cool on a wire rack.
  • Step #14 Cut into squares.
