Cornmeal Strawberry Cake Recipe

Ingredients
  • 1/2 tsp salt
  • 1 1/3 c cornmeal
  • 4 eggs
  • 1 c sliced fresh strawberries
  • 1 tsp baking powder
  • 1/2 c plain low-fat yogurt
  • 2/3 c unbleached all-purpose flour
  • 3/4 c unsalted butter
  • 1 1/4 c white sugar
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9 inch round cake pan.
  • Step #3 Sift together the cornmeal, salt & baking powder, flour, set aside.
  • Step #4 In a medium bowl, cream together the butter & sugar.
  • Step #5 Beat in the eggs, one at a time, then stir in the the vanilla.
  • Step #6 Add the dry ingredients alternately with the yogurt, stirring after each addition.
  • Step #7 Finally, fold in the strawberries.
  • Step #8 Pour the batter into the prepared pan.
  • Step #9 Bake for 45 to 50 mins in the preheated oven, until a toothpick or knife inserted, comes out clean.
  • Step #10 Cool cake in the pan on a wire rack for 30 mins then invert onto a serving plate.
  • Step #11 Serve with ice cream or whipped cream.
