Raspberry Cheesecake Pie Recipe

Ingredients
  • 2 (8 oz) packages cream cheese, softened .
  • 1/2 c seedless raspberry jam .
  • 1/2 c sugar .
  • 2 tbsps powdered sugar .
  • 2 eggs .
  • 1 chocolate crumb crust (8 or 9 inches) .
  • 1/2 tsp vanilla .
  • 1 1/2 tsps unflavored gelatin .
  • 1 c heavy whipping cream .
  • 2 tbsps cold water

Directions
  • Step #1 In a large mixing bowl,beat the cream cheese, sugar & vanilla until smooth.
  • Step #2 Add eggs;beat on lowish speed just until mixd.
  • Step #3 Pour into crust.
  • Step #4 Bake at 325F degrees for 25-30 mins or until the center is almost set.
  • Step #5 Cool on a wire rack for 1 hr.
  • Step #6 Refrigerate overnight.
  • Step #7 In a small saucepan,sprinkle gelatin over cold water; let this stand for 1 min.
  • Step #8 Cook over low heat/flame,stirring until gelatin is completely dissolved.
  • Step #9 Stir in jam.
  • Step #10 Refrigerate for 10 mins.
  • Step #11 In a small mixing bowl,beat crean until it begins to thicken.
  • Step #12 Add powdered sugar;beat until stiff peaks form.
  • Step #13 Remove 1/2 c for garnish;cover & put in the fridge.
  • Step #14 Gently stir 3/4 c whipped cream into raspberry mixture just until mixed.
  • Step #15 Fold in the remaining whipping cream;spread over cheesecake.
  • Step #16 Refrigerate for at least 1 hr.
  • Step #17 Garnish with reserved whipped cream.
