Java Beef Stew Recipe

Ingredients
  • 1/3 c unsalted butter, softened .
  • salt & pepper .
  • 2 medium onions, sliced .
  • 1 tbsp dried thyme .
  • 2 c hearty red wine (Zinfandel or Shiraz) .
  • 1/3 c flour .
  • 1 lb red potatoes, chunked .
  • 2 medium parsnips, chunked .
  • 4 garlic cloves, finely sliced .
  • 1 bay leaf .
  • 3 lbs beef chuck, cut into 1 . 5 inch cubes .
  • 2 tbsps olive oil .
  • 1 c strong brewed coffee .
  • 2 medium carrots, chunked

Directions
  • Step #1 Spice up beef with salt & pepper.
  • Step #2 Heat oil in large dutch oven over medium-high heat & brown beef in batches, without crowding.
  • Step #3 Transfer browned beef to bowl or platter.
  • Step #4 Add more oil to pot if needed.
  • Step #5 Cook onions until soft, about 6 mins.
  • Step #6 Add garlic & cook one min more.
  • Step #7 Add wine & coffee.
  • Step #8 Bring to a boilover high heat.
  • Step #9 Scrape up browned bits in bottom ofpot with a wooden spatula.
  • Step #10 Return beef to pot & add thyme & bay leaf.
  • Step #11 Bring to a boil.
  • Step #12 Reduce heat to low, & let simmer until beef is almost tender, cover the pot, about an hr & a half.
  • Step #13 Add veggies to the pot.
  • Step #14 Continue cooking until beef & veggies are tender, another 30 mins.
  • Step #15 Mix butter & flour together to form a paste.
  • Step #16 Stir in to simmering stew a pinch at a time until desired thickness is acheived.
  • Step #17 Discard any remaing butter & flour paste.
