Cuban Bread Recipe

Ingredients
  • 1/2 oz salt .
  • 1 oz instant yeast .
  • 1 oz sugar .
  • 15 oz water .
  • 24 oz bread flour

Directions
  • Step #1 Place the water in mixing bowl.
  • Step #2 Mix all other ingr.
  • Step #3 in seperate bowl.
  • Step #4 Add dry ingr.
  • Step #5 on top of the water.
  • Step #6 Mix on low or speed #2 for kitchen aid mixers.
  • Step #7 (12min.
  • Step #8 ).
  • Step #9 Add a little oil at the end of the mix, this will make it easy to remove the dough from the bowl.
  • Step #10 Lighty flour or oil flat surface & flaten the dough by hand.
  • Step #11 Lighty strech & fold all 4 sides in.
  • Step #12 (note:this will help to get a higher dough when baked off.
  • Step #13 Place the dough in an oiled bowl with the folded sides down.
  • Step #14 After 30min punch down & do one more strech & fold.
  • Step #15 Let ferment 30 more mins.
  • Step #16 Punch down & form dough into a round loaf.
  • Step #17 (about a 20 oz loaf.
  • Step #18 ).
  • Step #19 Set loaf in or on what ever your going to bake in or on.
  • Step #20 (oiled or greased pan).
  • Step #21 At this point you can choose to score the bread now or I wait about 20min or even the end of proofing.
  • Step #22 (take care not to cut to deep if at the end.
  • Step #23 ).
  • Step #24 Let loaf proof about 30 to 60min.
  • Step #25 (dough should dent to the touch but dont over proof).
  • Step #26 You can eggwash just before you bake but I place a small iron skillet at the bottom of the oven when heating to 400.
  • Step #27 I place the bread on the oven racks & add a 1/2 oz of cool water to the skillet to steam.
  • Step #28 3 times or 1st 5min.
  • Step #29 No eggwash is needed if your going to steam.
  • Step #30 Bake at 400* about 18min.
  • Step #31 (dont forget to turn your bread after about 12min or halfway.
  • Step #32 (even browning).
  • Step #33 Remove the bread & place on a cooling rack.
  • Step #34 (if you use a bread pan be sure to remove your loaf from the pan so it doesnt become sogy when cooling).
  • Step #35 Cool & enjoy.
