Ingredients
1 large red bell pepper, sliced fine .
2 tsps black pepper .
1 c evaporated milk .
1 large green bell pepper, sliced fine .
1 tsp cayenne pepper (to taste) .
3 celery ribs, sliced fine .
4 tbsps sugar .
2 tsps salt .
1 dozen ears of corn, sweet .
1 1/2 c onions, sliced fine .
3 large ripe tomatoes, peeled seeded & sliced .
8 tbsps unsalted butter
Directions
Step #1 Shuck the corn & cut the kernels into a bowl.
Step #2 Scrape cobs into the same bowl to get all the "milk.
Step #3 ".
Step #4 Melt the butter in a heavy saucepan over medium -high heat.
Step #5 Add all vegetables & saute until onions are transparent.
Step #6 Stir in salt & the peppers.
Step #7 Add corn & corn "milk", the sugar & evaporated milk.
Step #8 Reduce heat to low, cover & cook this until corn is tender, about 15 mins.
Step #9 Adjust seasoning to taste.
