Ingredients
  • 1 large red bell pepper, sliced fine .
  • 2 tsps black pepper .
  • 1 c evaporated milk .
  • 1 large green bell pepper, sliced fine .
  • 1 tsp cayenne pepper (to taste) .
  • 3 celery ribs, sliced fine .
  • 4 tbsps sugar .
  • 2 tsps salt .
  • 1 dozen ears of corn, sweet .
  • 1 1/2 c onions, sliced fine .
  • 3 large ripe tomatoes, peeled seeded & sliced .
  • 8 tbsps unsalted butter

Directions
  • Step #1 Shuck the corn & cut the kernels into a bowl.
  • Step #2 Scrape cobs into the same bowl to get all the "milk.
  • Step #3 ".
  • Step #4 Melt the butter in a heavy saucepan over medium -high heat.
  • Step #5 Add all vegetables & saute until onions are transparent.
  • Step #6 Stir in salt & the peppers.
  • Step #7 Add corn & corn "milk", the sugar & evaporated milk.
  • Step #8 Reduce heat to low, cover & cook this until corn is tender, about 15 mins.
  • Step #9 Adjust seasoning to taste.
