Deviled Eggs Ole' Recipe

Ingredients
  • 1 tbsp sour cream .
  • 1/4 tsp garlic powder .
  • paprika (optional) .
  • 1/4 c salad dressing (use Miracle whip salad dressing or similar, not mayo for this) .
  • 2-3 large green onions, finely sliced .
  • 1 c finely grated cheddar cheese .
  • 2 tsps Miracle Whip, mustard mania (optional but good to use) or 1-2 tsp prepared mustard (optional but good to use) .
  • finely grated cheddar cheese (any amount desired for topping) .
  • 14 large hard-boiled eggs .
  • seasoned salt & pepper (to taste) .
  • 1/4 c medium salsa (or use mild)

Directions
  • Step #1 Drain the salsa over a fine strainer (push the liquid through the strainer with a spoon to speed up the process) set aside.
  • Step #2 Using a sharp knife slice the hard-boiled eggs in half.
  • Step #3 Carefully remove the yolks from 14 eggs & place this into a food processor/blender (save the whites from 2 eggs or just eat them lol!).
  • Step #4 Place the 24 egg whites halves on a plate or serving platter.
  • Step #5 Add in all remining ingredients except finely shredded cheddar cheese, seasoned salt & pepper; process for about 10 seconds or until smooth.
  • Step #6 Add in seasoned salt & pepper to taste, & process again.
  • Step #7 Transfer the mixture to a bowl.
  • Step #8 Add in 1 c finely grated cheddar cheese & mix with a spoon until mixed.
  • Step #9 Spoon or pipe about 1 tbsp (or more if desired) into the egg white halves.
  • Step #10 Sprinkle top each top of egg with some grated cheddar cheese, then sprinkle with a small amount of paprika.
  • Step #11 Cover up the eggs with plastic wrap & put in the fridge for a minumum of 4 hrs before serving.
