Layered Raspberry Cheesecake Recipe

Ingredients
  • 2 tsps lemon juice .
  • 1/2 c melted butter .
  • 1 tsp vanilla .
  • 1/3 c powdered sugar .
  • 6 oz raspberry Jell-O gelatin .
  • 2 (10 oz) packages frozen raspberries .
  • 2 1/2 c boiling water .
  • Raspberry Layer .
  • 2 (8 oz) packages cream cheese, softened .
  • 2 c graham cracker crumbs .
  • Crust .
  • 1/2 c sugar .
  • 2 c heavy whipping cream, divided .
  • Cream Cheese Layer .
  • 1 c powdered sugar

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Combine crust ingredients.
  • Step #3 Press onto bottom of 9x13 pan.
  • Step #4 Bake for 5-7 mins to set it up.
  • Step #5 Cool completely (very important) on wire rack.
  • Step #6 Stir raspberry jello into boiling water; add sugar & stir until dissolved.
  • Step #7 Fold in raspberries & lemon juice.
  • Step #8 Chill mixture until soft set, about 1 to 1 1/2 hrs.
  • Step #9 Keep an eye on it.
  • Step #10 Once soft set, pour over completely cooled crust & spread evenly.
  • Step #11 Chill in fridge.
  • Step #12 Meanwhile, beat together the cream cheese & 2 tbsps of whipping cream.
  • Step #13 Gradually beat in the powdered sugar; set aside.
  • Step #14 Beat remaining cold whipping cream until soft peaks form.
  • Step #15 Fold whipping cream & vanilla into cream cheese mixture.
  • Step #16 Carefully layer cream cheese mixture on top of raspberry layer.
  • Step #17 Cover up with foil wrap & chill at least 4 hrs or overnight.
  • Step #18 Store in refrigerator.
