Blueberry, Bread Pudding Recipe

Ingredients
  • Garnish .
  • 1 pinch salt .
  • 1 tbsp light brown sugar, roughly sliced .
  • 1 tsp vanilla extract .
  • Topping .
  • 2 tsps cinnamon .
  • 1 c milk .
  • 1 1/2 c fresh blueberries or frozen blueberries .
  • 8 large eggs .
  • 1 c prepared caramel topping .
  • 1 lemon zest .
  • 1 tbsp whiskey, rum or favorite liquour .
  • 8 c cubed day old bread .
  • 1/3 c sugar .
  • 1 c heavy cream .
  • 4 tbsps sweet butter

Directions
  • Step #1 In a butter 8 X 8 oven proof pan place 1/2 the bread cubes in pan place 1/2 the blueberries top remaining bread & then blueberries.
  • Step #2 Mix eggs, cream, cinnamon, milk, extract, zest, sugar & salt.
  • Step #3 Pour over bread pressing gentle to submerge bread then cover with plastic wrap & soak for one hr.
  • Step #4 Preheat oven 350.
  • Step #5 Remove wrap sprinkle brown sugar on top & dot with butter.
  • Step #6 Bake in oven for 45-50 mins.
  • Step #7 Just before serving heat caramel & whiskey in a microwave proof dish.
  • Step #8 Dust pudding with powdered sugar & pour some sauce over pudding.
