Hunter Stew Recipe

Ingredients
  • 8 slices bacon .
  • 3 garlic cloves, minced .
  • 1 large onion, sliced .
  • 2 bay leaves .
  • 1 beef bouillon cube .
  • 1 c water .
  • 3 lbs rabbit, cut in pieces (or chicken, duck or other poultry) .
  • 2 tbsps dried parsley .
  • 1 1/2 c dry red wine (white may be used if desired)

Directions
  • Step #1 Spice up meat with salt & pepper & lightly dust with flour.
  • Step #2 In a deep fry pan fry bacon until just done but not crispy.
  • Step #3 Remove bacon from grease & brown meat pieces in grease.
  • Step #4 Cut cooked bacon into bite sized pieces & add to pan along with remaining ingredients.
  • Step #5 Bring to boil.
  • Step #6 Reduce heat & let simmer 1 1/2 hrs or until meat is tender.
