1 (14 1/2 oz) can chicken broth or vegetable broth .
1/2 lb small fresh green beans .
3 carrots .
1/4 c butter or margarine
Directions
Step #1 Cook the broccoli in boiling water to cover for 3 mins (or you can steam in vegetable steamer until crisp-tender); drain & set aside.
Step #2 Cut the bell peppers into thin strips; slice the carrots into thin slices.
Step #3 Melt the butter In a large-ish skillet over med-heat/flame; add in onion; stir/saute until tender.
Step #4 Stin in flour & the next 3 ingredients.
Step #5 Cook & stir constantly for 1 min.
Step #6 Gradually stir in the broth; bring to a boil.
Step #7 Lower heat & let simmer, stirring constantly, for 8 mins or until thickened.
Step #8 Stir in broccoli, carrot, coconut milk, bell peppers, & green beans; cook & stir constantly for 3-5 mins or just until vegetables are crisp-tender.
