Quick Hoppin' John Recipe

Ingredients
  • 1/2 c sliced celery .
  • 1/3 c sliced onions .
  • 3 slices bacon, sliced .
  • 2 tbsps sliced fresh parsley .
  • 1 c water .
  • 1 (15 oz) can black-eyed peas, undrained .
  • 1 c uncooked quick long-grain rice .
  • celery leaves .
  • 1/2 tsp dried thyme .
  • Optional Garnish

Directions
  • Step #1 Cook bacon In a large-ish saucepan until crisp, stirring often.
  • Step #2 Add celery & onion; cook, stirring constantly until vegetables are tender.
  • Step #3 Stir in water & black-eyed peas; bring to a boil.
  • Step #4 Cover up, reduce heat, & let simmer 5 mins.
  • Step #5 Stir in rice, parsley, & thyme.
  • Step #6 Remove from heat; cover & let this stand 5 mins or until liquid is absorbed & rice is tender.
  • Step #7 Garnish, if desired.
