Easy Enchiladas Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 (16 oz) package Mexican mix cheese .
  • 1 (8 oz) can condensed tomato soup .
  • 2 (8 oz) cans enchilada sauce (I sometimes use 3) .
  • 8 tortillas (# depends on how many tortillas you want) .
  • chili powder (to taste) .
  • 1 1/2 lbs ground beef

Directions
  • Step #1 Brown the ground beef.
  • Step #2 Add onions.
  • Step #3 When completely cooked, drain oil & place this In a large-ish bowl.
  • Step #4 Add enchilada sauce & tomato soup.
  • Step #5 Add chili powder.
  • Step #6 This is pretty much to taste.
  • Step #7 Mix really well.
  • Step #8 Spray large pan with cooking spray.
  • Step #9 Add about 1 c of meat mixture into each tortilla.
  • Step #10 Top with cheese before rolling tortilla.
  • Step #11 Place in pan & repeat.
  • Step #12 After you've rolled each tortilla, top the enchiladas with remaining meat mixture (this is where the extra enchilada sauce comes in).
  • Step #13 Place in preheated oven (@ 450) for 25-30 mins.
  • Step #14 When times has five mins left, add in the remaining cheese.
  • Step #15 Once the five mins are up, serve this with sour cream & sliced olives on top & a side of spanish rice.
