Frushi Recipe

Ingredients
  • cooking spray .
  • 10 mandarin orange sections .
  • 1/4 c light coconut milk .
  • 1 dash salt .
  • 1 c sushi rice or short-grain rice, uncooked .
  • 1 1/4 c water .
  • 20 berries (fresh strawberries, raspberries, or blackberries) .
  • 1/4 c sugar

Directions
  • Step #1 Bring water & rice to a boil in a medium saucepan.
  • Step #2 Cover up, reduce heat, & let simmer 15 mins or until water is almost absorbed.
  • Step #3 Remove from heat; let this stand, covered, 15 mins.
  • Step #4 Place rice In a large-ish bowl.
  • Step #5 Add sugar, & salt, coconut milk, stirring carefully until well mixd.
  • Step #6 Cover up & let this stand 20 mins.
  • Step #7 Lightly coat hands with cooking spray.
  • Step #8 Divide rice mixture into 20 equal portions, shaping each into a ball (about 1 rounded tbsp each).
  • Step #9 Lightly press each rice ball into an oval between palms; place ovals on a bakaing sheet lined with wax paper.
  • Step #10 Top each oval with the oranges & berries & press carefully to adhere.
  • Step #11 Chill until ready to serve.
  • Step #12 If desired, serve this with your favorite flavored yogurt for dipping.
