Middle-eastern Meatless Cabbage Rolls Recipe

Ingredients
  • 1/2 c olive oil .
  • 1 tsp dried mint .
  • salt .
  • 1 c long grain rice .
  • 1 tsp salt .
  • 1 1/2 c spring onions .
  • 1/2 c finely sliced parsley .
  • 1/4 c olive oil .
  • 1/4 c lemon juice .
  • Rice & Chickpea Prepared Stuffing .
  • To finish .
  • pepper .
  • 24 cabbage leaves .
  • 1 c fresh tomatoes, sliced & peeled .
  • 3 garlic cloves .
  • 1/2 tsp allspice .
  • 1 c canned chick-peas, drained

Directions
  • Step #1 Gently saute spring onions in 1/4 c olive oil for 2-3 mins.
  • Step #2 Place in large bowl add in the remaining stuffing ingredients,adding salt & pepper to taste.
  • Step #3 Remove leaves from cabbage carefully so as not to tear them.
  • Step #4 Parboil leaves in boiling water until limp enough to handle,cooking leaves in 2 to 3 batches.
  • Step #5 Drain in colander,rinse with cold water.
  • Step #6 Cut out larger center rib of each leaf,any large leaves in half.
  • Step #7 Line base of a deep pan with the ribs & any leftover torn leaves.
  • Step #8 Place a generous tbsp of stuffing on base of each leaf,roll once & tuck in sides to contain filling.
  • Step #9 Roll to end of leaf.
  • Step #10 Repeat with remaining ingredients.
  • Step #11 Crush & mince garic add salt,mint & lemon juice,mix with olive oil.
  • Step #12 Pack rolls flap side down in lined pan,sprinkling garlic-lemon mixture between layers of rolls.
  • Step #13 Invert a plate on top of rolls to keep them intact during cooking.
  • Step #14 Add enough cold water to just cover rolls,put lid on firmly.
  • Step #15 Bring to boil,reduce to low & let simmer 45 mins.
  • Step #16 Remove from heat & leave aside 30 mins,serve lukewarm or cold.
