Chive-corn Muffins Recipe

Ingredients
  • 1 tsp salt .
  • 1 tbsp sugar .
  • 2 large eggs .
  • 2 tsps baking powder .
  • 1 1/2 c plain yogurt .
  • 1/4 c fresh chives, sliced .
  • 1/2 tsp cayenne pepper, don't leave out .
  • non-stick vegetable oil cooking spray .
  • 1 c all-purpose flour .
  • 3 tbsps unsalted butter, melted .
  • 1 c yellow cornmeal

Directions
  • Step #1 Position rack in center of oven & preheat to 425F degrees.
  • Step #2 Spray 10 standard muffin c (each about 1/3 c capacity) or 30 mini-muffin c with non-stick spray.
  • Step #3 Whisk flour, sugar, cornmeal, baking soda & cayenne pepper in medium bowl.
  • Step #4 Mix well to mix ingredients.
  • Step #5 Stir in chives.
  • Step #6 In another medium bowl whisk yogurt, eggs & melted butter.
  • Step #7 Add yogurt mixture to dry ingredients & stir just until mixed.
  • Step #8 Divide batter among prepared muffin c, using about 1/3 c batter for each standard c or about 1 generous T.
  • Step #9 for each mini-muffin c.
  • Step #10 Bake until muffins are puffed & golden & tester inserted into center comes out clean, about 20 mins for standard & 14 mins for mini.
  • Step #11 Transfer pans to rack & let cool a couple of mins before serving.
  • Step #12 Or make ahead & rewarm right before serving in a 350 degree oven.
  • Step #13 Serve with softened butter (lots & lots of softened butter!).
