Corned Beef Roast Recipe

Ingredients
  • 1 (5 1/2 lb) corned beef brisket with spice packet
  • 1 medium onion, sliced
  • 7 small potatoes, peeled & sliced
  • 4 carrots, peeled & sliced
  • 3 cloves garlic, sliced

Directions
  • Step #1 Preheat the oven to 300F degrees F (150 degrees C).
  • Step #2 Place the brisket in the center of a roasting pan.
  • Step #3 Arrange the potatoes & carrots around the sides.
  • Step #4 Place the onion & garlic on top of the roast, & season this with salt & pepper.
  • Step #5 Empty the seasoning packet over the roast, & pour enough water into the pan to almost cover the potatoes.
  • Step #6 Cover with a lid or heavy aluminum foil.
  • Step #7 Roast for 5 to 6 hrs in the preheated oven, until the roast is so tender it can be flaked apart with a fork.
