Easy Apple Curry Recipe

Ingredients
  • 2 tbsps pecan nuts, broken .
  • 2 cinnamon sticks .
  • 1 tsp tamarind extract .
  • 1 tsp dried mango powder (aamchur, available in Indian spice shops) .
  • 4 granny smith apples (cored & cut in 2cm cubes) .
  • 2 bay leaves .
  • 1 tsp chili powder .
  • 1 tsp salt .
  • 2 tbsps butter .
  • 1 tbsp gingerroot (fresh, grated) .
  • 1 whole green chilies (optional for more heat)

Directions
  • Step #1 Heat butter.
  • Step #2 Add cinnamon, bay leaf & green chilli.
  • Step #3 Stir for few seconds, then toss in mango powder & chilli powder.
  • Step #4 Stir again briefly, then add apples & tamarind.
  • Step #5 A.
  • Step #6 dd a few tbsps of water & close lid.
  • Step #7 Cook on medium-high heat for about 5 mins.
  • Step #8 Add salt & pecan nuts.
  • Step #9 Cook apples till all liquid is evaporated, they should be soft.
  • Step #10 Enjoy.
  • Step #11 This dish would accompany any protein dish, like lentils or eaten with mashed potato for Ekadasi fasters.
  • Step #12 Tip: Any other firm, slightly under ripe fruit can be used, like pears, pineapples & peaches.
  • Step #13 If your kids hate salad, its a gret way to serve them a 'cooked' salad.
