- 1/2 c fresh corn kernels, lightly mashed with a fork .
- 1 c milk .
- 4 large eggs, lightly beaten .
- 1 tsp sugar .
- 1 tbsp coarse yellow cornmeal .
- fresh ground pepper, to taste .
- 1 tbsp butter, melted & cooled to about room temp .
- 1/2 tsp salt .
- 1 tbsp fresh chives, snipped
Directions
- Step #1 Preheat oven to 425*F.
- Step #2 Butter a 12 c popover pan or muffin pan.
- Step #3 In a medium bowl mix together the flour, cornmeal, sugar, salt, & pepper.
- Step #4 Stir in remaining ingredients until almost mixed(a few lumps should remain).
- Step #5 Pour 1/4 c of batter into each c, & bake this until puffed & deep golden, 25 to 30 mins.
- Step #6 Serve as soon as possible.
