Ingredients
  • 4 tart baking apples .
  • 1/2 c butter, at about room temp .
  • 1/2 lemon, juice of .
  • 2 1/2 c cold water .
  • 1 pinch salt .
  • 2/3 c sugar .
  • 3 eggs .
  • 2/3 c ground almonds

Directions
  • Step #1 Put the water & lemon juice In a large-ish saucepan.
  • Step #2 Halve, core & peel the apples & drop them in the lemon water to prevent discoloring.
  • Step #3 Add another 1/2 c of water, if necessary, to cover the apples.
  • Step #4 Cover up the pan & bring to a boil quickly.
  • Step #5 Reduce heat & let simmer uncovered for 3-5 mins, until apples are just barely tender.
  • Step #6 Remove apples from the pan & drain them.
  • Step #7 Preheat oven to 350F.
  • Step #8 Butter a 10-inch pie plate.
  • Step #9 Separate the eggs.
  • Step #10 Put the egg whites in a mixing bowl with a pinch of salt & whip them until stiff peaks form.
  • Step #11 In another bowl, cream the butter & sugar.
  • Step #12 Stir in the egg yolks & almonds.
  • Step #13 Mix a spoonful of whipped egg whites into the creamed mixture then carefully fold in the rest of the egg whites.
  • Step #14 Place the apple halves, flat side down in the buttered pie plate.
  • Step #15 Pour the almond topping mixture over the apples & carefully smooth the batter between the apples.
  • Step #16 The tops of the apples will peek through.
  • Step #17 Bake for 35-40 mins until golden brown.
  • Step #18 Serve at about room temp.
