Cotter's Kettle Recipe

Ingredients
  • 1 c chicken stock .
  • 2 large carrots, scrubbed & sliced in 1/2 inch thick slices .
  • 3/4 lb bratwursts or kielbasa .
  • salt & pepper .
  • 1 1/2 c rutabagas, cubed .
  • 1 large leek, sliced, including the green top

Directions
  • Step #1 Bring the vegetables to a boil in chicken stock; reduce heat to simmer & cook for 15 to 20 mins or until vegetables are fork tender.
  • Step #2 Remove the skin from sausage, cut in thick slices, & add to vegetables.
  • Step #3 Adjust salt & pepper to taste & let simmer covered for a few mins.
  • Step #4 Serve with coarse grain mustard, dark rye bread & boiled potatoes.
