Bean Burrito Bake Recipe

Ingredients
  • 1/2 c monterey jack cheese .
  • 1 (15 oz) can black beans .
  • 1 (15 oz) can kidney beans (cannellini) .
  • 1 tsp onion powder .
  • 1/4 tsp cayenne pepper .
  • 1/2 tsp cumin seeds .
  • 1/4 tsp ground black pepper .
  • 1 (15 oz) can sliced peeled tomatoes .
  • 1 (15 oz) can sweet corn (not cream style) .
  • 1/4 tsp chili powder .
  • 4 oz fat free sour cream .
  • 1 1/2 c instant rice

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 To 2 quart baking dish add the black beas, corn,kidney beans, tomatoes.
  • Step #3 (Drain all except the tomatoes.
  • Step #4 ).
  • Step #5 Sprinkle top over the top all of the spices.
  • Step #6 Then add the cheese & rice.
  • Step #7 Mix well so the rice is dampened by the tomato juices.
  • Step #8 Cover up & bake for 20 mins.
  • Step #9 Remove from oven & add 4 oz fat free sour cream.
  • Step #10 Mix so it is evenly distributed through the dish.
  • Step #11 Return to oven & bake 10 more mins.
  • Step #12 Allow to cool only briefly before serving unless you intend to use as a dip.
  • Step #13 In this case serve it warm but not hot.
